Winter Veg Sweeter after Frost

Did you know…?
…that most winter vegetables taste sweeter after a frost? They turn starch into sugars to prevent the water in their cells from freezing. Because there is another substance in addition to water in the cells, it makes it harder to freeze. The cells inside the vegetables have icy cold water but the water will not turn to ice.
Vegetables that taste sweeter after a frost include carrots, kale and Brussels sprouts.
